The Summer Cup

 

the Summer Cup- pimms no 1 lillet rouge and firestone walker double barrel ale- a delicious beverage that is delicious long after summer is over!

 

Sometimes, my husband and I agree on everything. On Pimms, however, we’re a house divided. I LOVE Pimm’s- a Gin soaked in a special herbal blend that is great with simply club soda and ice- but really shines in the notoriously British Pimm’s Cup. My husband, however, feels that Pimm’s tastes more like skittles dissolved in Gin. He thinks it is too cloyingly sweet and isn’t a big fan.

When we read a recent Wall Street Journal piece on the resurgence of the Pimm’s Cup- a British Summer staple- in London, spotlighting new and interesting ingredients and shunning the ultra-sweet lemonade and cucumber slices usually mixed in, we knew we HAD to come up with a new take of our own on the classic Cup.

Using one of our favorite new finds- Lillet Rouge- which is a slightly sweet wine similar to Port (but not as thick or sugary), and some Double Barrel Ale from Firestone Walker, we came up with a cocktail I could drink every night- even when the nights turn cooler this fall.

Ingredients

  • 3 parts Firestone Walker Double Barrel Ale (or another pale ale)
  • 2 parts Lillet Rouge
  • 1 part Pimm's No 1
  • splash of lime juice

Instructions

  1. In a tall glass, stir well chilled Lillet Rouge and Pimms, as well as the lime juice.
  2. Slowly pour Firestone Walker Double Barrel Ale and gently stir.
  3. Drink and enjoy!
